  1. 1 medium apple

  2. 1 egg , separated

  3. 1/2 tsp cinnamon

  4. 100 g plain flour

  5. 100 g buttermilk

  6. 12 rashers sweet cure bacon

  7. maple syrup , for pouring

  8. olive oil , for frying

  1. Place the mashed apples in a large bowl and add the egg yolk, cinnamon and flour; mix well.

  2. Add the buttermilk, whisking to form a smooth paste. Beat the egg whites until stiff then fold into the mix.

  3. Heat a skillet or pancake pan with a little oil and fry tablespoons of the mixture until risen and golden.

  4. Meanwhile, grill the bacon and serve on top of the pancakes with a generous helping of maple syrup.
