  1. 1 c Water

  2. 1/2 c Butter or margarine

  3. 1 c All-purpose flour

  4. 4 Eggs

  5. Filling:

  6. 5 Egg yolks

  7. 1/3 c Granulated sugar

  8. 1 ds Salt

  9. 1/3 c All-purpose flour

  10. 1 1/2 c Milk

  11. 2 ts Vanilla extract

  12. 1 tb Butter or margarine

  13. 2 Ripe bananas, mashed

  14. 1/2 c Whipping cream

  15. Mocha Chocolate Sauce:

  16. 1/2 c Semi-sweet chocolate

  17. Chips

  18. 3 tb Whipping cream

  19. 2 To 3 Tbsp. strong brewed

  1. Preparation time: 1 hr.

  2. Baking time: 35 to 40 min.

  3. Oven temperature: 375 degrees F.

  4. This dessert tastes much the same as Banana Cream Pie.

  5. When you have extra ripe bananas, peel, wrap in plastic and freeze; use in this dessert.

  6. For 8 servings you will need: Cream Puffs: coffee Preparation: 1.

  7. For cream puffs, in saucepan, heat water and butter to boiling.

  8. Add flour all at once; beat 2 minutes until very stiff.

  9. Remove from heat.

  10. Beat in the eggs, one at a time, until dough is smooth.

  11. Beat until satinlike.

  12. Shape 8 mounds of dough on greased baking sheet.

  13. Bake at 375 degrees F for 35 to 40 minutes.

  14. Split puffs.

  15. Return to oven; turn oven off.

  16. Let dry 5 minutes.

  17. For filling, beat egg yolks with sugar and salt until pale yellow.

  18. Beat in flour and 1/2 cup milk.

  19. Heat 1 cup milk to boiling.

  20. Whisk a little milk into egg mixture; return to pan.

  21. Cook, stirring, until thick.

  22. Remove from heat; add vanilla and butter, stirring until butter is melted.

  23. Chill.

  24. Add mashed bananas.

  25. Whip the cream.

  26. Fold into the banana cream.

  27. For sauce, mix chocolate chips, cream and coffee; stir and heat until smooth.

  28. Spoon banana cream into cream puffs.

  29. Drizzle mocha-chocolate sauce over cream puffs.

  30. Serve.
