  1. Ingredients :

  2. 1 pound pork tenderloin, cut into thin strips

  3. 1/4 cup teriyaki sauce

  4. 1 cup water

  5. 1/2 cup pineapple chunks

  6. 2 1/2 cups pineapple juice

  7. 1 1/4 cups white rice

  8. 1 tablespoon vegetable oil

  9. 1 medium onion, chopped

  10. 1 medium red pepper, chopped

  11. 1 medium green pepper, chopped

  12. 1/4 cup slivered almonds

  1. Directions :

  2. Marinate pork in teriyaki sauce for several hours in refrigerator.

  3. Add pineapple juice to a saucepan and bring to a boil. Add rice and cook for about 15 minutes or until rice is tender and liquid is absorbed.

  4. In a large skillet, over medium high heat, stir fry pork in hot oil for about 5 minutes or until browned. Add onion and peppers. Stir fry for 5 minutes. Stir in pineapple chunks and almonds. Heat through.

  5. Serve over rice.

  6. Serves 4
