  1. 2 large fresh ears of corn

  2. 1/2 small red onion (diced)

  3. 1 small jalapeno

  4. 1/2 cup chopped mint leaves

  5. 1 tablespoon olive oil

  6. 2 tablespoons fresh lime juice

  1. Cook corn in boiling salted water until tender about 3-5 minutes.

  2. Allow to cool and cut kernels off cob (should be about 2 cups).

  3. Combine corn onion jalapeno fresh mint oil and lime juice in a medium bowl.

  4. Season with salt and pepper to taste.

  5. Serve at room temperature.

  6. Makes 2 1/2 cups
