  1. 1/2 pound ground beef

  2. 1 tablespoon flour, all-purpose

  3. 1/2 cup ground pork

  4. 2 tablespoons vegetable shortening

  5. 1/2 cup rice boiled, mashed

  6. 1 small onion chopped

  7. 1 each egg

  8. 1/2 cup tomato pulp

  9. 1 x salt to taste

  10. 1 x black pepper to taste

  11. 1 quart beef stock prefer veal stock if possible*

  1. Mix meat with rice and egg.

  2. Season and shape into little balls the size of walnuts.

  3. Roll in flour and fry lightly in hot shortening. Remove and in the same pan brown onion and add tomato.

  4. Add beef stock and simmer five minutes.

  5. Add meat balls and simmer for one half hour or until thoroughly heated.
