  1. 1 tsp oil

  2. 1/2 cup finely chopped onions

  3. 1/2 tsp grated garlic (lehsun)

  4. 3 cups chopped spinach (palak)

  5. salt to taste

  6. 1 1/2 cups low-fat milk (99.7% fat-free)

  7. freshly ground black pepper (kalimirch) powder to taste

  1. Heat the oil in a deep non-stick pan, add the onions and garlic and sauté on a medium flame till the onions turn translucent.

  2. Add the spinach and salt and sauté on a medium flame for 2 to 3 minutes.

  3. Add 1½ cups of water, mix well and bring to boil, stirring once in between. Keep aside to cool.

  4. Blend in a mixer to a smooth purée.

  5. Transfer back to the same pan, add the milk and pepper and simmer for another 2 minutes, stirring once in between. Serve hot.
