  1. 113g (4oz) caster sugar

  2. 113g (4oz) butter or Stork® margarine

  3. 2 eggs

  4. 113g (4oz) self-raising flour

  5. For the icing:

  6. 50g butter, at room temp

  7. 1 tablespoon milk

  8. 100g icing sugar

  9. green food colouring

  1. Preheat the oven to 180 C / Gas 4.

  2. Mix the caster sugar and 113g butter until smooth.

  3. Add 1 egg and half the flour. Mix well then add the other egg and rest of the flour untill well mixed. Put into cupcake cases.

  4. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 15 minutes.

  5. To make the icing: mix the 50g butter until soft. Add the milk and gradually add the icing sugar until very well mixed and is smooth. Add the food colouring.

  6. When the cakes are cool, spoon the icing into a piping bag and shape like the top of fir trees.
