  1. 1 (5 1/4-ounce) package bulgar wheat

  2. 1 cup water

  3. 2 tablespoons vegetable oil

  4. 1/2 cup chopped seeded tomato

  5. 1/2 cup chopped cucumber

  6. 1/4 cup sliced green onions and tops

  7. 1 cup low fat plain yogurt

  8. 1/4 cup Equal Spoonful™

  9. 2 tablespoons lemon juice

  10. 2 cloves garlic, minced

  11. 1/2 teaspoon dried mint leaves

  12. 1/2 teaspoon dried oregano leaves

  13. 1/2 teaspoon salt

  14. 1/4 teaspoon freshly ground pepper

  1. Pour bulgar wheat into medium bowl; discard spice packet, if included in box of bulgar. Mix water and oil into bulgar; let stand until water is absorbed, about 20 minutes .

  2. Stir tomato, cucumber and onions into bulgar. Mix remaining ingredients; stir into bulgar mixture. Serve at room temperature or refrigerate and serve chilled.
