  1. Bulgur 1 Cup (16 tbs)

  2. Warm water 2 Cup (16 tbs)

  3. Onions 2 Large , chopped

  4. Olive oil 2 Tablespoon

  5. Pine nuts 5 Tablespoon

  6. Butter/Margarine 1 Tablespoon

  7. Ground lamb 2 Pound

  8. Onion 1 Small , chopped

  9. Garlic 1 Clove (5gm) , minced

  10. Allspice 1/4 Teaspoon

  11. Ground cloves 1/8 Teaspoon

  12. Mint leaves 1 Tablespoon , crushed

  13. Oregano 1 Teaspoon

  14. Plain yogurt 6 Tablespoon

  15. Salt To Taste

  16. Pepper To Taste

  1. Directions Soak bulgur in 2 cups warm water in bowl for 30 minutes.

  2. Saute 2 onions in olive oil in skillet until tender.

  3. Cool.

  4. Saute pine nuts in butter in skillet.

  5. Reserve a few of the pine nuts.

  6. Combine remaining pine nuts with sauteed onions in bowl; mix well.

  7. Season with salt; set aside.

  8. Preheat oven to 400 degrees.

  9. Drain cracked wheat.

  10. Combine with ground lamb, 1 onion, garlic, allspice, cloves, mint, oregano, salt and pepper in bowl; mix well with hands.

  11. Press half the lamb mixture over bottom and side of baking pan.

  12. Spread onion and pine nut mixture in prepared pan.

  13. Pat remaining lamb mixture over top.

  14. Score top in diamond pattern; sprinkle with reserved pine nuts.

  15. Bake for 30 to 45 minutes or until done to taste.

  16. Top each serving with 1 tablespoon yogurt.
