  1. 1/4 cup olive oil

  2. 8 chicken 'lovely legs'*

  3. 2 zucchini, sliced thickly

  4. 1 small red capsicum, seeds removed, sliced

  5. 1 small eggplant, chopped

  6. 1 onion, cut into wedges

  7. 3 cloves garlic, sliced

  8. 1 1/2 tablespoons chopped rosemary

  9. cup white wine

  10. punnet cherry tomatoes

  1. Preheat oven to 200C. Pour oil into a solid baking dish. Heat for 5 minutes.

  2. Place chicken, zucchini, capsicum, eggplant, onion, garlic and rosemary into the dish. Bake for 30 minutes.

  3. Turn chicken. Add wine to the dish along with the cherry tomatoes. Season well. Bake for a further 30 minutes.

  4. Serve with buttered risoni and a green salad.

  7. Reduce temp by 20C for fan forced.
