  1. 30 small new potatoes (5 per person)

  2. 12 carrots (2 whole per person)

  3. salt and freshly ground black pepper to taste

  4. 2 small handfuls sugar

  5. 6 pork loins

  6. 6 dashes garlic salt (1 dash per loin)

  7. 6 small handfuls mixed herbs (oregano, thyme, basil, marjoram, parsley, sage; rosemary optional)

  8. 1 large onion, chopped

  9. butter

  1. Preheat the oven to 200 C / Gas 6. Wash potatoes and carrots, taking care to remove any bad spots and rooting.

  2. Arrange potatoes and carrots in roasting tin (at least 23 x 33 x 7.5cm). Salt potatoes and sprinkle sugar over carrots.

  3. Bake potatoes and carrots in the preheated oven until tender, about 15 minutes.

  4. While the potatoes and carrots are baking; trim excess fat off pork loins, rub garlic salt and mixed herbs to both sides of each loin, and set aside until potatoes and carrots are done. (Leaving a bit of fat on is good, it enhances the flavour.)

  5. When potatoes and carrots are cooked to desired doneness, add onion and pork loins, dab butter around potatoes, lower oven temp to 150 C / Gas 2 and bake for 15 minutes.

  6. Grind pepper over everything, serve and enjoy!
