  6. Green onions (scallions) chopped

  7. Lemon grass, peeled and finely sliced

  8. Sugar

  9. Small red chili pepper, seeded and crushed

  10. Nuoc cham sauce

  11. Soy sauce

  12. Peanut oil

  13. Coconut milk

  14. Five spice powder

  1. Soak about 25 bamboo skewers overnight inboiling water for at least 45 minutes so they will not burn whencooking. Combine marinade ingredients.

  2. Cut chicken into thin strips and add tomarinade, ensuring each strip is covered. Cover and refrigerate severalhours to overnight.

  3. Drain and reserve marinade for another useor discard. Thread chicken strips on to skewers. Barbecue or broil about3 minutes until brown.

  4. Serve as part of a main course orappetizers with nuoc cham sauce or peanut sauce.
