  1. 1 fillet of beef (1 1/2 kg )

  2. 6 cardamom pods, remove husks

  3. 5 cloves

  4. 1 cinnamon quill

  5. 2 tsp cumin seeds

  6. 2 tsp coriander seeds

  7. 3 garlic cloves, minced

  8. Sea salt & pepper

  9. Juice of 2 limes

  10. cup chopped fresh coriander

  11. cup olive oil

  12. cup pistachio nuts

  1. Pound all spices in a mortar & pestle Add rest of ingredients and pound to chunky consistency.

  2. Rub a little marinade over beef and seal on hot griddle or pan Put the remaining spice mix all over beef Transfer to oven tray and bake in hot oven (200degC) till just cooked to medium rare, approx 15-20 mins.

  3. Rest the fillet then cut & serve with the Chickpea and Spinach terrine.
