  1. 4 boneless skinless chicken breast halves (4 ounces each )

  2. 1 can (6 ounces) tomato paste

  3. 3/4 cup water

  4. 2 garlic cloves, minced

  5. 1 tablespoon dried parsley flakes

  6. 1 teaspoon salt

  7. 1/4 teaspoon pepper

  8. 1/2 teaspoon Italian seasoning

  9. 1/2 teaspoon dried oregano

  10. 1/4 teaspoon crushed red pepper flakes, optional

  11. 2 cups (8 ounces) shredded part-skim mozzarella cheese

  12. 1/4 cup grated Parmesan cheese

  1. Chicken Parmigiana Recipe photo by Taste of Home Place the chicken in a greased 8-in. square baking dish. In a small saucepan, combine the tomato paste, water, garlic and seasonings; bring to a boil. Pour over chicken.

  2. Bake, uncovered, at 400° for 15-20 minutes or until chicken juices run clear. Sprinkle with cheeses; bake 10 minutes longer or until the cheese is melted. Yield: 4 servings.
