  1. 2 tablespoons unsalted butter

  2. 1 1/2 cup chopped yellow onion

  3. 2 cups fresh sweet corn kernels (from 2 medium-size ears)

  4. 1 teaspoon salt

  5. 1/2 teaspoon cayenne

  6. 1 tablespoon chopped garlic

  7. 1 medium-size fresh jalapeÒo, seeded and chopped

  8. 1/2 pound goat cheese, crumbled

  9. 1/2 cup heavy cream

  1. In a medium-size saucepan over medium heat, melt the butter. Add the onion, corn, salt, and cayenne and cook, stirring, for 6 minutes. Add the garlic and jalapeño, stir to mix, and cook for 2 minutes. Add the cheese and cream and stir until the cheese melts completely. Keep warm until ready to serve.

  2. Yield : about 2 1/2 cups
