  1. Marinade:

  2. 2 Tbsp. rice or cider vinegar

  3. 2 Tbsp. soy sauce

  4. 1 Tbsp. vegetable oil

  5. 4 cloved garlic, smashed

  6. 4 rib eye or other grilling steaks,

  7. 6 oz each Ginger Butter:

  8. 1/4 cup minced fresh cilantro, parsley or green onion

  9. 1/4 cup butter, softened

  10. 2 tsp grated gingeroot

  11. 1 tsp hot pepper sauce

  12. Mix Ginger Butter ingredients together. Spoon onto a piece of plastic wrap. Shape into a log, roll up and refrigerate until firm.

  13. Whisk marinade ingredients together in a shallow dish. Add steaks, turning to coat, and marinate for 20 minutes (or refrigerate overnight).

  14. 4 minutes per side for med-rare. Transfer to a warmed plate, tent with foild and let stand for 5 minutes. Slice butter into rounds; place on steaks. Makes

  15. 4 servings.

  16. (Note: My family enjoys this meal without tenting the steaks and without shaping the butter. What a bunch of hill-billies we are!)
