  1. 1 1/2 cups butter , softened

  2. 2 1/2 cups sugar

  3. 1 (3 ounce) package banana instant pudding

  4. 6 bananas

  5. 4 eggs

  6. 2 teaspoons vanilla extract

  7. 2 teaspoons baking soda

  8. 4 cups flour

  9. 1 1/2 teaspoons salt

  10. 1 cup 2% low-fat milk

  11. 2 teaspoons vinegar (let sit in milk for 5 minutes before adding to recipe)

  1. Cream butter, sugar and pudding mix in mixing bowl.

  2. Hand mash bananas and add to butter mixture.

  3. Stir in milk + vinegar.

  4. Gradually add eggs, flour vanilla, baking soda and salt.

  5. Pour batter evenly into 6 mini loaf pans or 4 larger loaf pnas.

  6. Bake approximately 45 minutes - 1 hour depending on oven and altitude.

  7. Bread is done when toothpick comes out clean.
