  2. 12 30 ml 1 teaspoon 2 cloves

  3. 45 ml 45 ml 2 stalks

  4. 2 Pork spare ribs

  5. Clear honey

  6. Five-spice powder

  7. Garlic, finely chopped and crushed

  8. Dry sherry or rice wine

  9. Nuoc Mam sauce

  10. with 1 teaspoon anchovy essence

  11. Fresh lemon grass, sliced thinly

  12. Fresh red chili peppers, finely chopped

  1. Wash and dry the spare ribs and place themin a large bowl.

  2. In another bowl, combine the honey,five-spice powder, garlic, dry sherry, Nuoc Mam, lemon grass and chili.

  3. Mix well. Spread the honey mixture over the spare ribs and leave tomarinate for 4 hours.

  4. The ribs can be cooked over a barbecue,turning frequently and basting with the marinade, or baked in the ovenat 190 o C/375 o F/Gas Mark 5, basting with themarinade, or grilled under a moderately hot grill, basting with themarinade.
