  1. 1 tsp olive oil

  2. 2 medium white onions , diced

  3. 3 garlic cloves sliced

  4. 28 oz. can diced tomatoes , drained

  5. 3 yukon gold potatoes , peeled and diced

  6. 5 cups fish stock

  7. 1 tsp thyme

  8. 1/4 tsp dried parsley

  9. 2 red snapper fillets , cut in

  10. 1" cubes

  11. 1/2 lb medium shrimp , shelled and de-veined

  12. 1/4 tsp red pepper flakes

  13. 1/2 tsp lime juice

  14. 1/2 tsp ground black pepper

  1. Cook onions and garlic in olive oil over medium heat, approximately 4 minutes.

  2. Add tomatoes and stir, cooking two minutes.

  3. Add potatoes, stock, thyme and parsley.

  4. Bring to a rapid boil.

  5. Reduce heat to medium and cook uncovered 15 minutes.

  6. Add fish, shrimp, pepper flakes, lime juice and pepper. Stir well.

  7. Cook 5 minutes and serve hot.
