  1. 1 1/2 cups cooked rice

  2. 3 tablespoons granulated sugar

  3. 1 1/2 cups skim milk

  4. 1 large egg, beaten

  5. 1 tablespoon raspberry liqueur

  6. 1 cup fresh raspberries

  7. Mint leaves for garnish

  1. Combine rice, sugar, milk and egg in large saucepan. Cook over medium-low heat until thick and creamy (about 25 to 30 minutes), stirring frequently. Remove from heat; stir in raspberry liqueur. Cool.

  2. Spoon into individual dessert dishes or parfait glasses. Top with raspberries; garnish with mint leaves.
