  2. Vegetable Patties:

  3. 8 ounces chopped broccoli

  4. 8 ounces chopped zucchini

  5. 8 ounces chopped green beans

  6. 1 medium onion, peeled and finely chopped

  7. 1 clove garlic, minced

  8. 2 cups fine dry breadcrumbs

  9. 1/4 cup all purpose flour

  10. 2 tbsp. heavy or whipping cream

  11. vegetable oil

  12. Tomato Sauce:

  13. 6 tbsp. butter

  14. 10 tomatoes, peeled, seeded and chopped

  15. 2 cloves garlic, minced

  16. 1/2 tsp. salt

  17. 1/2 tsp. pepper

  1. For Vegetable Patties:

  2. Add broccoli, zucchini and beans to a large saucepan of boiling salted water. Cook until tender. Drain vegetables well. Transfer vegetables to a blender and add onion and garlic. Puree vegetable mixture and transfer to a large bowl. Mix in breadcrumbs, flour, cream, salt and pepper. Cover and refrigerate 30 minutes. Scoop mixture into 3 inch balls. Flatten into patties. Add vegetable oil to a large, deep skillet to a depth of 3/4 inch. Add patties and cook until browned, about 3 minutes per side. Drain on paper towels.

  3. For Tomato Sauce:

  4. Melt butter in a large saucepan. Add tomatoes, garlic, salt and pepper. Simmer about 60 minutes, stirring occasionally, until sauce is thickened.
