  2. 2 cups sugar

  3. 1 teaspoon salt

  4. 1 teaspoon baking soda

  5. 1 teaspoon ground cinnamon

  6. 3 eggs

  7. 1-1/4 cups canola oil

  8. 2 teaspoons vanilla extract

  9. 1 can (8 ounces) crushed pineapple, drained

  10. 2 cups mashed ripe bananas (4 to 5 medium)

In another bowl, whisk the eggs, oil and vanilla; add pineapple and bananas. Stir into the dry ingredients just until moistened. Pour into two greased 8-in. x 4-in. loaf pans.

  2. Bake at 350° for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 loaves (16 slices each).
