  1. 1 cup 62g / 2 1/5oz Roasted corn kernels

  2. 2 cups 292g / 10oz Tomatillos - husked, and (medium) coarsely chopped

  3. 1 tablespoon 15ml Finely-diced red onion

  4. 1 1/2 teaspoons 7 1/2ml Minced jalapeno

  5. 2 tablespoons 30ml Fresh lime juice

  6. 2 tablespoons 30ml Coarsely-chopped cilantro

  7. 1/2 teaspoon 2 1/2ml Honey

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  1. Combine the corn, tomatillos, onion, jalapeno, lime juice, cilantro and honey in a bowl and season to taste with salt and pepper.

  2. This recipe yields about 2 1/2 cups of salsa.
