  1. 3 c all purpose flour

  2. 1 tsp soda

  3. 1 tsp salt

  4. 2 c sugar

  5. 1 1/4 c vegetable oil

  6. 3 beaten eggs

  7. 2 tsp vanilla

  8. 3 c chopped raw apples (about 6 good sized apples)

  9. 1 c chopped pecans

  1. Sift flour, soda and salt together into a large bowl. Add sugar. Stir in oil, beaten eggs and vanilla. Stir in apples and nuts making a very stiff dough. You will need to stir by hand, a mixer will not give same results. Spoon dough into greased and floured tube or bundt pan. Bake at 350 for 60 minutes, test for doneness (tap to see if it springs back or insert a toothpick to see if comes out clean). Remove from oven, cool slightly before removing from pan.
