  1. 2 cups Chopped/sliced Mushrooms , a variety of your choice; may use more than one type

  2. 1 Tbsp Butter

  3. 1 tsp Chopped Fresh Thyme or 1/2 Tsp Dried , crushed

  4. 1 Large Fresh , minced garlic clove

  5. Salt & Coarsely Ground Black Pepper

  6. 1/2 cup Dry White Wine

  7. 1 box Boursin Cheese

  8. 2 boxes Prepared Appetizer-size Phylo Pastry Cups ,

  9. 15 per box

  10. 1/3 cup Grated Monterey Jack Cheese

  1. Melt butter in pan over medium-high heat. Add mushrooms, wine, salt, pepper, thyme and garlic, stirring until wine starts to bubble.

  2. Reduce heat, adjust salt & pepper to taste; continue to stir until mushrooms are tender and wine has sufficiently evaporated, but mushrooms are not dry. Remove from heat.

  3. Stir in Boursin cheese. Spoon into phylo cups and top each with about a teaspoon of jack cheese. Bake at 375F until cheese is melted, about 5 minutes. Serve immediately.
