  1. Ingredients ( serves 2)

  2. 90g Hakubaku organic dried soba noodles

  3. 1 large carrot, peeled, cut into matchsticks

  4. 1/2 bunch broccolini, cut into 5cm lengths

  5. 60g baby corn, thinly sliced diagonally

  6. 50g baby Asian salad leaves

  7. 150g Herb-crusted roast beef, thinly sliced

  8. 1/2 cup fresh coriander leaves

  9. 80ml (1/3 cup) Neil Perry Fresh Soy & Chilli Dressing

Instructions Jump to Ingredients ↑

  1. Cook the noodles in a saucepan of boiling water for 2 minutes. Add the carrot, broccolini and corn and cook for 2 minutes or until tender. Drain and transfer to a serving bowl. Add the salad leaves, beef, coriander and dressing. Toss to combine and serve.
