  1. 3-4 chicken breasts, cut into 1-inch cubes

  2. 1 kielbasa , cut into 1-inch cubes

  3. 1 pound cooked shrimp , peeled and deveined

  4. 3 Tbsp olive or vegetable oil

  5. 1 cup chopped green pepper (1 large)

  6. 1 cup chopped red pepper (1 large)

  7. 2 cloves garlic , minced

  8. 2 cups chopped onion

  9. 1 cup chopped celery

  10. 1 (8 oz) pkg fresh sliced mushroom s

  11. 1 jalapeño pepper , seeded and chopped

  12. 1 (12 oz) can whole peeled tomato es, broken up

  13. 1 tsp thyme

  14. 1 tsp oregano

  15. 2 bay leaves

  16. 1 Tbsp parsley , chopped

  17. 1 Tbsp black pepper

  18. 1 Tbsp kosher salt

  19. 1 Tbsp cayenne pepper

  20. 3 cups chicken broth (canned or cubes)

  21. 3 cups uncooked white rice

  1. Heat oil in large Dutch oven or heavy stewpot. Brown chicken and sausage in oil. Remove meat.

  2. Sauté peppers, onion, garlic, celery, jalepeño, and mushrooms until tender, but not browned. Add seasonings, bay leaves, parsley, tomatoes, broth, rice and meat. Mix well. Bring to boil over moderate heat; reduce heat to low; cover pot and simmer 20 - 25 minutes (not stirring)or until rice is tender, adding shrimp the last 8 minutes. With large fork, fluff rice and evenly distribute ingredients, cook 5 minutes longer.
