  1. 1 tsp canola oil

  2. 1 medium onion, halved, then thinly sliced

  3. 2 cloves garlic, minced

  4. 1 poblano pepper, deseeded and chopped

  5. 1 tsp cumin powder

  6. 1 tsp dried oregano

  7. 4 cups fat-free, low-sodium chicken broth

  8. 1 cup water

  9. 1 15 ounce can white hominy, drained and rinsed

  10. 1 1/2 cups shredded cooked chicken breast

  11. 2 tbsp fresh lime juice

  12. cup finely chopped fresh cilantro

  1. Heat oil in large saucepan on medium heat.

  2. Cook onion, garlic and pepper for 2-3 minutes.

  3. Sprinkle cumin and oregano and cook for 1 more minute.

  4. Add chicken broth and bring to boil.

  5. Stir in hominy and shredded chicken. Cover, reduce heat and simmer for 10 minutes.
