  1. 1 onion, minced

  2. 1 chilli, finely chopped

  3. 1 tablespoon vegetable oil

  4. 1/2 teaspoon caraway seeds

  5. 1 medium to large potato, cut into small cubes

  6. 200g cooked (or leftover) gammon

  7. 1 tablespoon tomato paste

  8. 1 packet puff pastry

  9. 1 egg, beaten

  1. Preheat the oven to 180 C / Gas 4.

  2. Fry the onions and chilli in a pot with the vegetable oil until the onions are soft, add the caraway seeds and fry for 1 to 2 minutes.

  3. Add the potato cubes and let if fry for a few minutes. Keep stirring the mixture throughout. Cover the pot and reduce the heat to simmer. Cook for approximately 8 minutes or until the potato is soft. Continue stirring it occasionally to prevent it from burning.
