  1. 250g mung beans

  2. 225g caster sugar

  3. 1/2 teaspoon salt

  4. 1 teaspoon grated root ginger

  5. 2 glasses (about 400ml) coconut milk

  6. 1 bowl ice cubes

  1. Cook the mung beans in water until very tender like a porridge (pressure cook for 15 minutes).

  2. Stir in the sugar, salt and ginger continue cooking for few minutes.

  3. Add the coconut milk and simmer for few minutes.

  4. Turn off the heat, let it cool. Serve in a bowl and put some ice. Enjoy your snack:-)
