  1. 1 small head cauliflower, cut into florets

  2. 2 carrots, sliced

  3. 3 red potatoes, unpeeled, cleaned and cubed

  4. 3 tablespoons olive oil

  5. sea salt , to taste

  6. freshly ground black pepper , to taste

  7. 2 tablespoons curry powder

  8. pinch turmeric

  9. pinch cumin

  10. pinch cinnamon

  11. 1 tablespoon tomato paste

  12. 3 cloves garlic, minced

  13. 1 red chile, seeded and finely chopped

  14. 2 shallots, chopped

  15. 1/4 cup plain nonfat yogurt

  16. 1/4 cup finely chopped cilantro

  17. 1/2 cup fresh or frozen peas

  18. 1 teaspoon grated fresh ginger

  19. 2 cups basmati rice

  1. Place the cauliflower, carrots, and potatoes in a roasting pan and coat well with 2 tablespoons of the olive oil.

  2. Toss the vegetables with salt and pepper.

  3. Place the pan in an oven preheated to 400 degrees. Roast the vegetables for 25 to 30 minutes, stirring once or twice.

  4. Heat up the rest of the ingredients and add to the veggies. Serve over rice.
