  1. 1/2 cup(s) raisins, softened

  2. 1/2 cup(s) very hot water

  3. 1 1/2 cup(s) wheat bran

  4. 1/2 cup(s) molasses

  5. 2 eggs

  6. 1 cup(s) grated fresh carrots

  7. 1 cup(s) buttermilk

  8. 1 1/2 cup(s) whole wheat flour

  9. 1 1/2 teaspoon(s) baking soda

  10. 1 teaspoon(s) salt

  11. 1 teaspoon(s) cinnamon

  12. 1/2 cup(s) chopped nuts of your choice

  1. Blend hot water and wheat bran, let stand 5 minutes.

  2. Blend honey and eggs thoroughly with wire wisk. Mix in carrots and buttermilk.

  3. Blend dry ingredients together in a separate bowl.

  4. Blend dry ingredients into liquid ingredients until just mixed.

  5. Gently fold in raisins and nuts.

  6. Fill muffin cups evenly. Bake at 350 degrees for 20 - 25 minutes. Cool 5 minutes before removing from pan.
