  1. 1 1/4 cups flour

  2. 1/2 cup unsweetened dark chocolate cocoa powder

  3. 1 teaspoon baking soda

  4. 1/4 teaspoon salt

  5. 1 cup granulated sugar

  6. 1/3 cup vegetable oil

  7. 1 egg

  8. 3/4 cup buttermilk

  9. 3 tablespoons coffee liqueur (Baileys)

  10. 6 tablespoons unsalted butter , room temp (1 stick)

  11. 1 teaspoon brewed coffee , cooled

  12. 2 -4 teaspoons coffee liqueur (Baileys)

  13. 2 -3 cups powdered sugar

  1. Preheat oven to 350 degrees F.

  2. Mix together flour. cocoa, baking soda, and salt.

  3. In a separate bowl, whisk together sugar, oil, and egg until smooth.

  4. Whisk in flour and buttermilk, alternating between the two.

  5. Add Baileys.

  6. Scoop batter into 12 cupcake liners.

  7. Bake for 18-20 minutes.

  8. Frosting: Beat the butter in the bowl of an electric mixer until creamy and smooth. Add the Bailey's, coffee, and half of the confectioner's sugar and beat until smooth.

  9. Add the second half of the sugar and beat until smooth.
