  1. 2 green apples

  2. 1 red apple

  3. 1 lemon, juiced

  4. 1/2 cup good quality whole egg mayonnaise

  5. pinch of turmeric

  6. pinch of cumin powder

  7. pinch of ground coriander

  8. 2 tablespoons chopped chives

  9. 2 sticks celery, peeled and sliced

  10. 1/2 cup toasted walnuts

  1. Core and dice the apples. Place in a bowl with the lemon juice.

  2. Mix together the mayonnaise with the spices. Fold through the herbs.

  3. Fold the mayonnaise through the apples along with the celery and walnuts.

  4. Serve with a grilled chicken breast.
