  1. Mountains Blueberry cake

  2. 1/2 cup mayonnaise

  3. 1 cup sugar

  4. 1/4 tsp salt

  5. 1 tsp vanilla

  6. 2 eggs , separated

  7. 1 1/2 cup plus 1 tbsp. flour

  8. 1 tsp baking powder

  9. 1/3 cup milk

  10. 1 1/2 cup fresh blueberries

  11. For Topping:

  12. 1 cup soft brown sugar

  13. 4 tbsp plain (all purpose flour )

  14. 5 tbsp cold butter

  1. Cream margarine with 3/4 cup of the sugar.

  2. Add salt and vanilla.

  3. Add egg yolks and beat until creamy.

  4. Sift 1 1/2 cups flour with the baking powder.

  5. Add alternately with milk to egg yolk mixture.

  6. Beat egg whites until stiff, and add remaining sugar.

  7. Coat berries with 1 tablespoon flour and add to batter.

  8. Fold in egg whites.

  9. Pour into a battered 8 inch square pan.

  10. Sprinkle with more blueberries Sprinkle the crumb topping over the blueberries To make Topping:

  11. Mix ingredients well.

  12. Bake at 350 degrees for 50 minutes.
