  1. 1 tablespoon paprika

  2. 1 tablespoon chili flakes

  3. 1 tablespoon garlic powder

  4. 1 tablespoon onion powder

  5. 1 tablespoon garam masala

  6. 1/2 tablespoon cumin seeds, toasted

  7. 1 tablespoon fennel seeds, toasted

  8. 1/2 tablespoon curry powder

  9. 1/2 tablespoon salt

  10. 1/2 tablespoon cracked black pepper

  11. 2 cups dried chick peas, soaked overnight

  12. 2 tablespoons chana flour (chick pea flour)

  13. 1 1/2 tablespoons water

  14. 1 tablespoon Secret Seasoning/Rub

  15. 1 litre corn oil

  1. Refer to "Fried Chick Peas" directions.

  2. Drain the soaked chick peas & cook in salted water until halfway crooked – approx.

  3. -20 minutes.

  4. Drain and cool completely.

  5. Place the cooked peas into a small bowl and add the chick pea flour with seasoning and water.

  6. Pre heat oil to 345ºF.

  7. Fry the coated peas in the hot oil until golden brown and crispy.

  8. Remove from hot oil and drain on absorbent paper towels.

  9. Season again with Secret Seasoning/Rub and serve.
