  1. 1 can Del Monte ® Diced Tomatoes with Zesty Mild Green Chilies

  2. 1 can Del Monte ® Whole Kernel Corn-No Salt Added

  3. 1 can Del Monte ® Sliced Carrots

  4. 1 cup College Inn ® Light & Fat Free Chicken Broth 50% Less Sodium

  5. 12 oz. skinless, boneless chicken breasts , cubed

  6. 1 Tbsp. canola oil

  7. 2 tsp. chili powder

  8. 1 tsp. ground cumin

  9. 1-1/2 cups instant brown rice

  10. garlic powder

  11. cilantro sprigs

  12. sliced green onions

  13. salt , to taste

  14. pepper , to taste

  1. Directions 1. Season chicken with garlic powder, salt and pepper, if desired.

  2. Cook chicken in hot oil in large skillet until no pink remains, about 5 minutes.

  3. Stir in undrained tomatoes, corn, carrots, chili powder, cumin and broth. Bring to a boil.

  4. Stir in rice. Cover and simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir before serving. Garnish with fresh cilantro and green onions if desired.
