  2. 2 tablespoons olive oil

  3. 1 pound zucchini, about 3, quartered lengthwise, cut crosswise into 1/2 inch wide pieces

  4. 3 garlic cloves, minced

  5. 1/4 teaspoon dried oregano, crumbled

  6. 1/2 cup purchased salsa

  7. 1/2 cup shredded monterey jack cheese

  1. Heat olive oil in heavy medium skillet over medium low heat.

  2. Add zucchini, garlic and oregano and saute until garlic is just golden, about 2 minutes.

  3. Add salsa and simmer until zucchini is just tender, about 6 minutes.

  4. Reduce heat to low.

  5. Sprinkle Jack cheese over zucchini.

  6. Cover and cook until cheese melts, about 2 minutes.
