  1. 7 cups of beef or veal stock

  2. 60g lean bacon or ham

  3. 1 cup celery, sliced

  4. cup fresh or frozen peas

  5. 1 cup spinach or silver beet, chopped (include stalks)

  6. cup finely diced onion

  7. 1 carrot, diced

  8. 1 small zucchini, sliced

  9. 1 small leek, sliced thinly

  10. 3 medium tomatoes, skinned and diced

  11. cup cauliflower and/ or broccoli

  12. cup dried Lima or kidney beans, soaked for several hours before cooking, or pre-cooked canned beans

  13. 2 tablespoon oil

  14. 125g macaroni or spaghetti

  15. 1 clove garlic, crushed

  16. 2 teaspoon minced fresh sage

  17. 1 tablespoon chopped parsley

  18. cup grated tasty cheese

  1. Place stock and bacon in large saucepan, and bring to boil. Add beans.

  2. Saut fresh vegetables lightly in oil and add to stock.

  3. While stock is boiling, add macaroni and simmer for 20 minutes.

  4. Add garlic and sage. Garnish with parsley and cheese and serve with chunks of Italian bread.
