  1. 2 large eggs

  2. 1/2 cup vegetable oil (125ml)

  3. 1 cup milk (240ml)

  4. 1 teaspoon vanilla extract

  5. 1 3/4 cups flour, all-purpose

  6. 1/2 cup sugar

  7. 1/4 cup cocoa powder

  8. 1 tablespoon baking powder

  9. 1/2 teaspoon salt

  10. 1/2 cup chocolate chips (semi-sweet)*

  1. Preheat oven to 400 degrees F and prepare muffin pan.

  2. Grease muffin pan or fill with paper liners.

  3. A nonstick pan requires no greasing.

  4. In large bowl add and combine well eggs, oil, milk and vanilla.

  5. In smaller bowl combine well flour, sugar, cocoa, baking powder, salt and chocolate chips.

  6. Combine wet and dry mixtures and fold together gently until just mixed.

  7. Spoon into prepared pan.

  8. Bake for 20 minutes until the muffin spring back when lightly touched.

  9. Remove from pan and cool on rack.

  10. Hint: Sprinkle extra chocolate chips on top of each muffin before baking.
