  1. 1 shallot, chopped

  2. 2 cloves garlic, chopped

  3. 6 large basil leaves, chopped

  4. 1/2 pint heavy cream

  5. 1/4 cup chicken stock

  6. 1/4 cup Parmesan cheese

  7. 1 Tbsp. butter

  8. Salt & Pepper to taste

  9. Cornstarch slurry, if necessary

  1. Saute shallot and garlic in butter. Add cream, stock and basil; stir to combine. Gently simmer for 30 minutes. Add cheese; heat thoroughly. Thicken with cornstarch slurry, as needed. Season with salt and pepper.
