  1. 1 cup Minced onion

  2. 2 Cloves garlic, minced

  3. cup Olive oil

  4. 2 pounds Firm ripe tomatoes, cored, cut into 1-inch pieces -or-

  5. 2 cans (28-ounce) peeled whole Italian plum tomatoes

  6. Salt and freshly ground pepper, to taste

  1. In a large saucepan set over moderate heat cook the onion, garlic and oil, stirring occasionally for 5 minutes. Add the tomatoes and salt and pepper.

  2. Simmer, covered, stirring occasionally for 20 minutes. If desired, puree the mixture in a food processor or blender or through the disk of a food mill.
