  1. 3 Egg yolks

  2. 1 3/4 cups 109g / 3.8oz Canned whole-kernel corn

  3. 3/4 teaspoon 3.8ml Salt

  4. 1/8 teaspoon 0.6ml Pepper

  5. 1/4 cup 15g / 1/2oz Flour - sifted

  6. 3 Egg whites - stiffly beaten

  7. 1/2 cup 118ml Salad oil

  8. 1 cup 328g / 11oz Maple syrup

  1. Beat the egg yolks very well; stir in the corn, salt, pepper and flour. Fold in the egg whites. Heat the oil in a skillet and drop the batter, by the tablespoon, into it. Fry until browned on both sides.

  2. Heat the maple syrup and serve with the fritters. Serves 6.
