  1. 600g prawns, peeled and deveined

  2. 1 tbsp ground turmeric

  3. 1 tbsp curry powder

  4. Pinch of salt

  5. Vegetable oil, for deep-frying

  6. 2 onions, finely chopped

  7. 1 tbsp garlic paste

  8. 2 tbsp ginger, finely chopped

  9. 1 tbsp fennel seeds

  10. 1 tbsp cumin seeds

  11. 1 tbsp coriander seeds

  12. 400ml coconut milk

  13. 1-2 tbsp tamarind juice (soak tamarind pulp in about 1/2 cup of warm water and strain to get the juice)

  14. 1 cinnamon stick

  15. 1-2 tsp palm sugar, to taste

  16. 600g tomatoes, deseeded and finely chopped

  17. Small handful of coriander leaves

  18. Dash of ground turmeric

  19. Dash of curry powder

  20. 1 medium cauliflower, cut into small florets

  21. 1 red and 1 green chilli, finely slice
