  1. 2 Egg yolks

  2. 1 Egg

  3. 1 tablespoon 15ml Lemon juice

  4. 1 tablespoon 15ml Red wine vinegar

  5. 1 tablespoon 15ml Sea salt

  6. 1 teaspoon 5ml Freshly-ground white pepper

  7. 2 tablespoons 30ml Dijon mustard

  8. 2 cups 474ml Canola oil

  9. 1 cup 237ml Olive oil

  10. 1 cup 146g / 5.1oz Chopped fresh herbs

  1. Blend together the first 7 ingredients. With the food processor running, slowly drizzle canola oil and olive oil. If it's too thick, thin with water -- too thin, add more oil until you achieve the right consistency. (You can also use a good quality mayonnaise like Hellmann's or Best Foods.)

  2. Mix in the chopped fresh herbs.
