  1. INGREDIENTS & DIRECTIONS:

  2. Cut small and saute in a dry skillet over medium flame until fairly dry:

  3. 4 medium green tomatoes

  4. 2 Tablespoons fresh coriander leaves (cilantro), chopped

  5. 1 1/2 Tablespoons vegetable oil

  6. 1 teaspoon cumin seeds

  7. 1/2 clove garlic, chopped

  8. 1/2 fresh, hot green pepper

  9. Continue to saute until the tomatoes are lightly browned.

  10. Add:

  11. 1 Tablespoon whole roasted peanuts

  12. 1 teaspoon sesame seeds

  13. 1 teaspoon salt

  14. Continue to saute until the tomatoes are browned and soft. Remove the mixture from the pan, and grind it coarsely in a blender.

  15. In the same skillet, heat:

  16. 1 Tablespoon vegetable oil

  17. pinch hing

  18. 1/4 teaspoon cumin/mustard/sesame seed mixture

  19. 2 Indian bay leaves

  20. When the seeds pop, add the blender mixture and stir briefly. If you find the chutney too hot, you can add brown sugar to make it milder.
