  1. Vegan Caesar Dressing:

  2. 1/2 cup Dijon mustard

  3. 1/2 cup whole grain mustard

  4. 1/2 cup non-pareilles capers

  5. 1/3 cup garlic, minced

  6. 2 teaspoons sea salt

  7. 2 teaspoons ground black pepper

  8. 1 ounces vegan Worcestershire sauce

  9. 1/2 cup nutritional yeast

  10. 1 cup fresh lemon juice

  11. 2 1/3 cups canola salad oil Salad:

  12. 1 pound romaine lettuce

  13. 4 ounces seasoned croutons

  14. 4 ounces Vegan Caesar Dressing (recipe follows)

  15. 2 ounces soy 'Parmesan', shaved or grated

  1. For Vegan Caesar Dressing: Combine all ingredients except oil in a blender, cover and process for a few seconds; remove lid while continuing to run blender and slowly add the canola oil in a small stream, continuing to blend until all oil is incorporated and dressing is emulsified.

  2. For Salad: Toss cleaned romaine lettuce and seasoned croutons with Vegan Caesar dressing. Top with shaved or grated soy 'Parmesan'.
