  1. 1 cup all-purpose flour, spooned into a measuring cup

  2. 1 tsp baking powder

  3. Pinch of salt

  4. 2/3 cup firmly packed brown sugar

  5. 1/3 cup canola oil

  6. 1 egg, lightly beaten

  7. 1 tsp vanilla extract

  8. 1/2 cup oats (not quick-cooking or instant)

  9. 1/4 cup semisweet chocolate chips

  10. 1/4 cup raisins

  1. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper or silicone mats.

  2. Whisk flour, baking powder, and salt together in a large bowl. In a medium bowl, mix brown sugar, oil, egg and vanilla with an electric mixer. Stir in flour mixture, followed by oats, chocolate chips and raisins. Drop by the tablespoonful onto cookie sheets, 2 inches apart. Makes about 18 cookies.

  3. Bake cookies for 12-14 minutes, until edges are golden. Cool for 1 minute, then transfer to wire racks to cool completely.
