  1. Salmon...15cm x 15 cm thick cut Wisky...some

  2. Marinate rub:

  3. Thyme...pinch

  4. Cayenne pepper...pinch

  5. Smoked peprika...pinch

  6. celery salt...pinch

  7. onion flakes...pinch

  8. fennel seeds...pinch

  9. Brown sugar...pinch

  10. Minced garlic...1 tbsp

  11. Tomota sauce...1 tbsp

  12. Soy sauce...1 tbsp

  1. Fresh large fillet of salmon, remove bones

  2. Pour wisky over salmon, marinate for 30 mins

  3. Mix all the Rub ingredients together, rub on salmon

  4. Marinate for 2 hours in the fridge

  5. Pre-heat oven to 100 degree

  6. After 2 hours of marinate, take the salmon out from the fridge, allow it to come to room temperature

  7. Place salmon in the oven 100 degree for 15 mins

  8. Leave to rest for 5 - 10 mins before serving
