  1. Profiteroles

  2. 1/2 cup 99g / 3 1/2oz Margarine or butter - (1 stick)

  3. 1 cup 237ml Water

  4. 1/8 teaspoon 0.6ml Salt

  5. 1 cup 62g / 2 1/5oz Flour

  6. 4 Eggs

  7. Filling - (recipe follows)

  9. 1/2 Heavy cream - whipped

  10. 4 oz 113g Unsweetened chocolate - (4 squares)

  11. 6 tablespoons 90ml Butter or margarine

  12. 4 tablespoons 60ml Corn syrup

  1. In saucepan, mix margarine or butter, water, salt; bring to boil. Add flour all at once, stirring vigorously. Cook, stir until mix forms ball that doesn't separate.

  2. Remove from heat. Cool 10 minutes. Add eggs, one at a time, beating with wood spoon after each egg until smooth. Drop by teaspoon-sized balls onto greased baking sheet. Bake at 400F, 30 to 40 minutes, or until golden. Remove from oven. Split each Profiterole for steam to escape; remove soft dough from inside. Cool on wire rack.

  3. FILLING: Fill each Profiterole with cream. Place on serving plate. Melt chocolate, butter, syrup over gentle heat. Pour over Profiteroles; serve immediately. Preparation time: 30 minutes Baking time: 30 to 40 minutes
